Closed at 13 cm, this Laguiole knife suits larger hands and anyone who prefers a knife with real presence. It sits firmly in the hand, opens with ease, and offers a stronger grip without becoming bulky. In our workshop in Laguiole, Aveyron, we have made it entirely by hand since 1988, following the same gestures used for our more common sizes.
This model comes with an acacia handle — a light, dense, grained wood valued for its strength as much as its natural finish. The bolsters are stainless steel, the bee is forged into the spring, and the spring file-work follows pattern n°1, the simplest in our range. Other combinations are available on request: blade steel, bolsters, file-work and handle material can all be personalised.
Making a 13 cm Laguiole knife takes around four hours, spread across several steps that nothing shortens. The liners are prepared and the wood selected piece by piece; the spring is hand-engraved, then hardened to regain its flexibility. Assembly follows: the spring is set between the liners, riveted, then the blade is fitted and levelled against the hand-forged bee. The acacia handle is then shaped — roughed out, then sanded to its final form. Finishing completes the piece: the shepherd's cross set by hand, the blade, bolsters and wood polished.
The bee, forged directly into the spring, is neither glued nor screwed on: it has belonged to the piece since it was made, as the tradition of the authentic Laguiole requires. Established in Laguiole since 1988, we outsource none of the process.
